five string bass question

i have been looking around at five string bass and i noticed that some are strung with a high c and some a lower b. is the only difference in the two at the nut or are they constucted diferently? could i switch between the two and only have to get the nut refitted?

I'm very interested in getting a 5-string upright acoustic. Does it make any sense to look into having my 3/4 ply bass converted to 5 strings or should I be looking for a new bass? I want to tune it EADGC and greatly prefer an Eb neck (what my current bass has). I only play jazz, almost no arco.
