As far as the name goes. The name of company comes from nick name of the guy who started the company. In Poland Mayones spelled Majonez it's pretty much same as Mayonnaise so to make Mayones sound properly you would say Mayo-ness (ness would sound like its used in monster from Loch-ness) I hope it makes sense

Had a query re. specs./spacing - the bridge (close-up below) is adjustable via the hex.screws (so bridge spacing is infinitely, within reason, variable):-
