Which amp functions can be controlled with the foot switch? Is this an optional thang or do new ones come with the foot switch?

According to the manual, the footswitch controls Mute and Enhance on/off.

The manual doesn't describe the footswitch connection, however it must be a TRS jack. That's the easiest way to run two switches to one jack.

Since most players turn off Enhance in live situations, the only reasonable footswitch function is muting. I just mute with my inline tuner.
