So,
I have two 4 Ohm cabs, a 2460 and a 1260.
Aside from changing the 12" driver in the 1260, is there a way to drive the 100W side of the 800 RB into this cab?
Can you put a power resistor in series to increase the DC resistance? Would this harm the amp? Do I then get only 50W to the cabinet and the rest as heat?
Changing the driver is only about $100 so that is a realistic option.

Using a resistor is pointless - you'll lose as much as you gain. As you said you'll throw away audio power as heat. You can change the driver as long as it is identical except for impedance. All in all not a valid exercise IMO.

Don't forget the possible cost and hassle of replacing the crossover with one that works with the new woofer. That's assuming the cab actually has a full crossover, which I do not know. Do you?

It has a switchable 4-8 Ohm woofer connection. The mid and tweeter are 8 Ohms.

Cool. If it were me, I'd be looking at biamping the way G-K intended the amp to be used, although that would limit you to only one cab at a time.

Bi amping

2460 @ 300W and 1260 @ 100W I could run it Bi-Amped or full ramge with 2 cabs once the 1260 is 8 Ohm.

If you run it that way the 6 in the 2460 won't be pulling much if any weight, neither will the woofer in the 1260. Just biamping the 2460 would probably work a lot better, IMO.

Gotcha.
I really like the 1260 stacked on top of the 2460 because it's a slant....acts as sort of a "Bass monitor" for me. The Bi-amping feature is nice but Full range sounds great to me as well.
