No comment on the cabs, but if you've got the cheddar, I'd definitely go for the 500. A little more tonal flexibility with the variable mids and quite a few added features for the extra $100 - compressor, pre/post-EQ and pad switches on the DI, footswitchable mute and fx loop with mix control.

+1 And a ground lift switch - used it Saturday night on my PF500 to kill some wicked hum coming from my rig into the PA. Worked like a charm.

Definitely the PF500 if you want to use the amps DI. Those 'bells & whistles' really help for sending a signal to the desk.
& since I love 15"s........ Obviously the PF115 x 2 :-)
But, getting both the 210 & the 115 would be my goal. Just having the options would suit me, ymmv of course.

I've got a PF350 and PF115, but I've tried it all in every combination, and it's all just slightly different shades of great. The PF500 is more deluxe, but I love how the PF350 sounds and don't need the extra features or wattage.

As has been said, the PF500 is a bit more flexible, and a bit stronger. You ask what sounds better? What's better? The PF115 sounds just a touch more like a B15, the PF210 gets a touch deeper before rolling off the lows. Unless you have really sensitive ears, you won't hear a difference. Same deal with the heads. The PF350 sounds like a B15 out of the box, but the PF500 has other sonic options while still having the B15 sound available. I got a PF500 so I could sound like a SVT when I wanted to, but still have the B15 when I wanted that.
