Ashdown 210t deep

Just got this cab and it sounds awesome, my question is how much head do I need? The cab is rated at 200 watts at 8 ohms can I use a bigger head and not crank it wide open or buy a small head?

ANY amp will work, but as is true in all cases, there are limits to how much volume and low end ANY cab will handle. Use your ears, and common sense.

Thanks just wanted to be sure I can put a 500 head to it and not blow it if I'm careful

Correct. Just don't push the cab beyond what it's comfortable giving. You'll hear when it's had enough.
