So I have a 810 and a 215 that I want to split the signals between high and low.

I think I found the correct page(attached) in the owner's manual but I have a question:

What do they mean by "shielded cable"? The other two points say speaker cable so that's a given. Can a regular guitar/patch cable do the trick?

yeah, shorter patch cable is preferred (less chance of picking up interference, less loss and tidier) but guitar cable is fine. The shielding is the wire mesh matrix that "shields" the core wire from picking up stray radio frequency and other electromagnetic interference. Our guitard was agonizing over radio coming thru his amp and no matter what he did he couldn't eliminate it. I suggested he try a new guitar cable. Sure enough, it was a bad cable.

Instrument cable is shielded.
