For psuedo cool pretensious coffee shop stuff with a few acoustic guitars, it will work out fine. You'll need more for drums and electric stuff. No replacement for speaker displacement. Just my opinion, though you really can't expect watts to make up for one poor little cab.

+1 that's an awful lot of wattage to expect much from a single 15. A 410 would be much better, or a pair of 15's.

I regularly gig a 700rbII into a GK Neo112. Not all bands show up with half-stacks and a caveman for a drummer.

I think you'll have to be careful with all the power of the 1001rbII. That said, I think the 700rbII is a much more versatile head (growl at lower volumes), and would be a great match with the 115.
