Or maybe pair the 810 with a 215? Might be enough…

Agreed. One Ampeg is good, two is the serious setup.

Seriously, Acoustic 810s are the bottom of the barrel now, unlike the old days. I've seen used current-gen 810s for $250 at GC in the used section, meaning GC is buying them from unhappy owners for around $100 to $125 bux. That tell you anything?

As far as mixing a 215 & 810 on the same stage in the same area, have fun with the crossphasing issues when you turn up and wonder why your eyes are crossed but it sounds like slow sonic vomit.

Disagreement in camp doom. LOL.

How is it that doom is exempt from laws of acoustics? One 8x10 is bad enough. Two 8x10 makes for a laser beam of highs and high mids with thud + ungg for everyone else.

A really difficult question. When you say you can put 215 watts per channel into the speakers this doesn't tell you what you are going to get. The actual efficiency of the speakers needs to be taken into account and that is sound output vs electrical input, a highly variable factor amongst various speakers. Coupled with that is the actual characteristics of the amplifier and it's interaction with various speaker combinations that you connect to it.
I checked a couple of reviews of your amplifier and what I read (right or wrong) is that it is a general purpose PA system and not necessarily an amplifier optimised for bass. Meaning the low end grunt you are looking for may be beyond the capacity of your amp to deliver.
As I understand it you current cab is rated at 800W @ 4 ohm while the amp can deliver 1100W (bridged) at 4 ohm. That's more than enough power and perhaps too much, so you have to ask if the bridging has reduced the transient response and bottom end of the frequency response or perhaps if they weren't there to start with.
No answers unfortunately but the better question I think is what combination of amp and cab will give me the low end response I want.

A lot of folks just don't care about beaming, me included. For one thing, we almost always have PA. For another, even when we don't have PA, it still sounds great through the house to my ears. For even another, some of the guys in my band don't want to hear the bass as I hear it and are quite comfortable with not hearing highs.

A lot of guys on talkbass are using this amp with a preamp. that's where I got the idea. I just keep it backed off a bit. I've tried the amp in stereo using 1 channel and it wasn't very loud. The tone wasn't there either. It got a lot better after I bridged it but still not my cup of tea.

The low end grunt of that power amp is just fine. It's a power amp. If anything needs to produce low end grunt, it's a PA system, and Crown certainly isn't going to sell power amps incapable of delivering it.
