Trying to figure out what cab or cabs Peavey paired with the 400 watts @ 4ohms / 600 watts @ 2ohms Mark VIII head. Got any ideas?

They had tons and tons of them out in this era..

Commonly would be a 1x15 or 2x15 with Black Widow speakers.

They do move some great air.. and are usually paired well with a PA system's spectrum slottingl.

The best cab for that amp would have been the Peavey 215D-BW.
2x15 Cab in the deep version with Black Widow speakers.

I have a Mark Viii as well. It came with a 410t and sounds awesome. I have another 410t that I can use for bigger venues. They are both 4ohms, so paired the amp will run at 600 watts and 2 ohms. I have been pretty happy with the sound. No reason to change it yet!

I used my MarkVIII with a Sonic cab loaded with JBL E140's, and an old Kustom, Blue sparkle, 215 cab loaded with, (you guessed it ) JBL E140's. Nice chunky sound for roots type music.
