Well that depends on the cab/amp in question, but I really can't imagine an amp that can't handle 8 ohms

There's quite a few of them, actually. For instance, Ampeg SVT, SVT-CL, SVT-VR, Mesa/Boogie M6 Carbine, M9 Carbine, SWR SM 900, SM 1500, and so forth.
