Whilst further pondering my poss Warmoth 8 string build I'd like opinion on whether anyone knows if flat wounds are available for this purpose? So far I can't find any.

If a dedicated set isn't available would anyone know how to choose a 4 string set + individuals from the same / other manufacturer to make an 8 string set?

Hmm... I've never heard this come up before.
Would you expect the main strings to be flats, and the octaves to be rounds? Or would you want them to be flats to? That sort of seems to defeat the purpose of an 8-string, which is to add high end and brighter notes to the bass.

Just buy a set of bass strings and a set of guitar strings and make your own 8 string set.
