I remember someone describing the stingray as a "rubbery" sound, and it got me thinking, what would rubber would strings sound like? Like, the same core string, just instead of a nickel or steel winding, a rubber winding. Would it even produce a sound?

Not unless you had a piezo setup.

The pickups would pick up the steel core. It probably wouldn't change the sound as much as you think but I can't imagine it would be nice to play.

If you're looking for rubbery (smooth/deep) sound and want rubbery feeling strings, get the real deal... the Ashbory.

Beleive it or not someone makes black rubber coated strings. I have not seen them in several years and I'm not sure who makes them. My friend chuck used to have them on his bass. They were nothing like common coated strings like elixers. These were actually thick black rubber coatings. The sounded real plunky and muffled with no bright tone. I did not care for them but they definatley sounded different.

well, ive played nylon wound strings. as in, the wrap was nylon, or the string was completely nylon and textured to feel like it was wrapped...

no big difference in feel from conventional steel.

sound wise i can imagine a very tinny sound coming out from your pickups, since you cant have as much metal in the string.

LaBella makes a Nylon Tapewound version of their Deep Talkin Flats. They are actually kinda bright in a weird way when compared to flats, but almost no string noise. These work fine for any kind of pickup but it's probably not what the original poster had in mind.
