Nickel plated use a nickel plated outer wrap (usually wrapped around a steel core), stainless have a stainless steel outer wrap around a stainless steel core. Sound wise nickel will be a bit warmer and thumpier with a bit more mids. Steels tend to be slightly scooped with more high end sparkle. Nickel plated are also usually smoother to the touch.
