Sudden bad rattles?

I've replaced the (shop-bought) roundwounds on my bass with flatwounds a few months ago. The first difference which I've immediately picked up was that the flatwounds was perceived to be much 'slacker' than the roundwounds.

Every time before starting practice during the last few days, I had to adjust the string height of the D,A & E strings because they were really rattling badly (even when played 'open'). The only big change over the last few days was a sudden & big drop in temperature (our winter had arrived at last). Can this be a factor? I can't pick up any problem by looking at the neck. The string height where the neck meets body is currently 7mm+, which is much more than what I'm used to and creates problems when my rookie fingers fret closer to the body.

I surely can't lift the strings higher and higher every day? I'm considering going back to roundwounds (hoping that they will solve the problem during winter), but I'd prefer a different solution, if possible. Any ideas?
