It's a common myth that big gauge strings give more fundamentals. Mostly this is not the case, except for the really big gauge strings 760M, which have exceptional strong fundamentals.

What exactly makes these string sound so different?
And why is no other string comparable for more than 55 years?

Gauge is just the overall completed size. It doesn't tell you the core to wrap ratio. Some strings have a lighter core with thicker wrap, which produces stronger punchier mids and less fundamental. A heavier core with lighter wrap produces more fundamental and less mids. Both can be the same size gauge and have very different tone and response.
