I think it's been said somewhere on the first page, but it's true. Just about ALL of Claypool's tricks and fancy playing are deceptively simple, including Tommy The Cat.
I have a complete official transcription book for Seas of Cheese, complete guitar AND bass parts. I'll check it to see if they have any annotation for the techniques used in this tune.
But I can assure you, just like someone else already did, Claypool does not use any double-thumb technique. He's an absolute MASTER when it comes to thumb speed and he knows how to manipulate hammer/pulls so it sounds a lot faster and busier than it usually is. Same goes for My Name is Mud. I can play both of these tunes and I can assure you once again that he does not use any double-thumbing. I manage to sound fairly accurate with my playing, and I can't double-thumb to save my life.

I'll get back to you when I find the book, hopefully there's a decent explanation for it.

Les told me himself that he doesn't double thumb.

It's the same triplet form he uses going into the second verse on Laquerhead:

T=Thumb
LH=Left hand slap
P=Pop

1----------P-----------------P---------
2----LH-----LH------LH-------LH-----
3----LH-----LH------LH-------LH-----
4-T------T-------T-T------T--------T-
---1 and a 2 and a 3 and a 4 and a

Keep in mind he's also muting the open strings with his fretting hand index finger.

And it's correct that he is not double-thumbing, all thumb strokes are down strokes.
