It depends on the pickup. Most pickups do not have individually adjustable pole pieces, some do. You can tell by the fact that adjustables will have some kind of "hole" in the top for some kind of tool, usuallly a hexagonal one for an allen wrench. If it is adjustable, you won't need to remove the cover.
edit: Just looking at the listing on Musician's Friend website for DiMArzio model J's, they are adjustable. You'll need an appropriate sized Allen wrench to adjust them.

You could try contacting DiMarzio directly, I suppose.

are you kidding? most jazz pickups aren't adjustable at all, and (more annoyingly) are not "pre-set" for a good balance.

you'll want the non-metric wrench for your model Js (3/32", maybe?). raise the two center pairs up 1/16" or so, and set the outer pairs flush with the pickup top.

afterwords, adjust the whole thing to be balanced bass-to-treble, and also neck pickup to bridge pickup (bridge close to strings, neck further away and dropped a little more on the bass side), and you should be good.
