Is it okay for me to just yank the G-string off of 'er? Its an old Squire P-bass. Do I need to adjust the neck tension or anything?

You may have to adjust relief I believe. Not much though.

(Guessing here.) Uneven tension might twist or warp the neck. Can you go EEAD or EADD with spare strings? Just because the string is there doesn't mean you have to use it.
