Can I take off the pick guard of a jazz bass without affecting current pickup height?

Yes the pickup covers are attached with wood screws in the body cavity

On the possibly incorrect assumption that all Jazz basses are like my recent Geddy, yes.

The pickguard is strictly decorative and does not attach to the pick-ups. I was a little nervous the first time I pulled it off to adjust the truss rod, bit it is easy-peasy.
