Smile Question using High C on 5-STR

I currently have a Fender MIM 5-String Jazz that has Dimarzio Ultra Jazz 5 pups in it. I have been using a low B the whole time (actually an A, because my band tunes down a whole step)

My question is:

If I go DGFABb (or in standard EADGC) would there be any real problems in terms of the way the pickups would pick up a different string. (IE: the one that usually picks up the B string will be getting the E string instead) I just want to know if I am going to be losing tone over this, because that is my first priority. If it will be tonally different, what is the likely outcome?

ALSO,
I like stainless steel strings, and I usually buy DR. What would be my best way to go about getting strings from now on? I like a bright sound, and the sets that have 110 E strings tend to be a little too dark for what I am doing. Any suggestions on guages for me?

The pick ups won't know the difference, but the nut won't fit the strings. You'd need a new nut.

I never had a problem with the nut on my old 5 string, but I hated having it tuned to a high C. It's horrible, and I hardly ever used the C string. My ESP five stringer made alot more sense to me with a low B, felt 'right'. With a high C it didn't.

You might need to adjust the 'treble' side of the pickup a bit closer to the high strings maybe. I found I had to when switching to the high C
