Also, how far up the pickups should I go with the tape? |

Not sure what you mean by "how far up the pickups;" you don't usually put shielding tape on the pickup itself unless it's a single-coil with the coils exposed...
You want to cover the insides of the pickup cavities with the tape up to their top edges. |
