Just do a search on MIM Jazz basses, there are lots of guys doing what you are wanting to do. Most have to do with replacing the pickups and bridge, both of which are fairly simple if you know a little about soldering (for the pickups), and there are some good bridges on the market that have the same hole pattern as the MIM bridge (no drilling!). Other things a little more involved that you could do are upgrade the electronics (J-Retro seems to be popular) and shielding the pickups and control cavity. Good luck!
