How do you take the knobs off?

On my '65 P, they have setscrews. A small screwdriver works for those.
If there is no screw (or hex head) visible on the side of the knob, they should just pull off.

Alright, i'll check that out. next question, where is a good place to buy them? I was looking at musicians friend and all they have is crap.

chandlerguitars.com has a pickgaurd for just about every guitar and bass you can come up with and the best selection of color i've seen in my 7 years as a luthier.

Swapping pickguards is easy. Like was said before, the knobs have set-screws on the side.

Ok, i got the screw off and knobs off. how do i separate it from the input jack and the knobs?

The pots have threaded shafts with nuts that you remove, so they release their hold on the pickguard. Same goes for the jack.
