best methods of quick and dirty (yet decent) jam spot recordings

we've got two options to try out- a small stereo journalist's audio recorder and a laptop w/ mic. we're lucky to have a big room w/ high ceiling and while we'd like to try to get everything down in one shot we're not opposed to overdubbing guitars and bass later on the computer.

I've got a 6 ch mixer but only one semi-decent mic. I have access to a few other crappy ones. Besides you know how that always goes- crappy tone controls and it always ends up sounding like an old fostex cassette 4 track.

What simple yet decent methods do you use? We just want something we can use to record each song as we write it and jam along to at home.
