Reasonably busy bands? 2 or 3 depending on schedules. Might only be 2, and even then a conflict. This question is so subjective and dependent on personal factors/schedule factors that it's almost impossible for me to give you an answer that you'd find truly useful.
How do I deal with leaving a band and not burning bridges? Replacing yourself, helping to "train up" the person you help find to replace yourself, and being utterly and completely truthful...and you can certainly say "I don't want to burn any bridges, and want to make this as painless as possible for you", that kind of thing. Straight truth always rises to the top.
Your last question I'll answer the way that I know how: your "busy performing life" is the thing that will far and away make you "grow individually as a musician" the most. There is no better way to learn.
