I know he use's his ring finger to play the next string up, but it think for this case the middle finger seems to be the only way it will work. So, I'm trying to play like this:

When I first saw Gary Willis' video quite a few years ago, I was very impatient and did not listen carefully to his fingering explanations.
I wrongly interpreted GW's technique and started using my thumb finger; therefore, in your example, I would play
C(thumb) G(index) C(mid) Eb(ring)
without the thumb -
C(index) G(mid) C(ring) - a natural order - and Eb on G string (mid
That would be my automatic right hand response.
Using the index finger for Eb on G string like henry2513 offered, sounded very unattractive to my right hand.
As I said, I wrongly interpreted Willis' technique and chose the easy way.
