Syncopation/Counterpoint examples please

The other night at rehearsal we got talking about syncopation like in Joe Cocker's version of With a Little Help From My Friends. Most of what we play is pretty straight and I haven't really worked on anything quite like that, but I'd love to. Funny thing is we completely drew a blank trying to come up with other good examples to mess around with. So in the last two days the only other one that hit me is SRV's Couldn't Stand the Weather (which I messed around with a couple years ago and couldn't get ). Help me out if you can and give me a some good examples of stuff with some fun off beats. Not too too challenging, just looking to cover a little fresh ground. Thanks!

Well, in one of the live versions of teen town, they start jammin' after the theme is played, and jaco is playing a very cool syncopated lick several times

Much of the earlier Police stuff has very syncopated bass and drums - think Roxanne - but there are others.

I Shot the Sheriff (either Marley's or Clapton's version)
Clocks (Coldplay but redone by the Buena Vista Social Club)
