What is Manring doing here?

I understand he's using hipshots up top, but there are times where he grabs behind the bridge and changes the pitch of the harmonics. What is he doing to change it?

Its a custom made bridge on his Zon Hyperbass. It has hipshot-esque levers in it, which act in a similar manner.
