hi.

i'm trying to figure out the key center for the head and the solo parts of this tune to build a walking line to use with the real book,and i'm not sure of what scale to draw my modes from.

is the head played in Bbmaj ?

i'm confused by F,D and A dominant chords being used in this section.

if that is the correct key center,does he switch to the G-7 and the modes from that scale to play under the solos?

Maybe you ought to simply ignore the key and build walking lines based on the individual chord tones per each measure (which you should have handy if using the real book), improvising your passing /weak beat tones using your ear. There's no reason that won't work just as well.

Actually, outlining the individual chords (while honoring the previous chord and next chord) will work much better than trying to use the tonal center.
