I haven't heard of any MI, Berkelee, or simialr type schools in the those areas. But check out the local colleges for one with a Jazz program. You can learn a lot from studying tradional theory and playing in a Jazz band. Also Vegas you're going to be around a lot of musicians so people to hookup with for jams and maybe lessons. No matter where you are look for rehearsal bands, they really help getting your reading together and usually a chance to solo with a big band play pads behind you.

There are no real "Music Schools" here (Las Vegas),
however, there are a ton of players (many of them "monsters") and quite a few give private lessons.

Also UNLV is a major college and seems to have a pretty decent music program.

I'm trying to minor in music at UW. Dunno how good the program is, though.
