the first thing to learn to play jazz is how to read chord changes and how to make lines simultaneously. a book i have is called 'creating jazz bass lines' by Jim Stinnet which is fairly simple but really is a good introduction.
In terms of listening i would check out; Kind of Blue (cliche i know), Cool Struttin' by sonny clark, and any mingus, and obviously any and all jaco, however i would reccomend checking bright size life by pat metheny which has jaco in a more traditional bass role.
peace, good luck

Check out www.jazzbooks.com .

The Jamey Aebersold play along series of jazz songbooks are held in high regard by many members here. I haven't personally checked any out so all I can do is point you to the site.

Building Walking Bass Lines, by Ed Friedland. I think "walking" is the basis of much jazz bass, and Ed's book is an excellent introduction.

Have fun!

Chuck Sher's "Improvisers Bass Method" gives really thorough
grounding.
