What's a Double Stop?

I thought I understood this, at least in relation to a violin, as two strings played at one time. Does that translate to EBG? (I mean, I'm sure you can just pluck or strum any couple strings at once, but is the technique acutally used?)

Any famous examples?

To finger a note is to "stop" it, a double stop is two notes fingered and played (including open strings). Is this technique actually used?
Why just listen to CUCUMBER SLUMBER or Ornette's LONELY WOMEN or RAMBLING or UNA MUY BONITA or ...
