However, I sold a bass to a TBer in China who had 5 posts and zero feedback. After a little due diligence I found he was on the level and the transaction went just fine.

OK, OP here. Deal completed, faith in humanity was rewarded!

I appreciate all the advice, even though I went against the majority of it. Anyway... The money is still safely in my paypal, the bass is happily in Taiwan, and yet again TB has proven to be a great place to do business.

So if I agree to sell something to an overseas buyer and ship the bass to the confirmed paypal address and have it sent so it has to be signed for (by US Post Office) am I bullet proof?

The "US Post Office" does not deliver to the entire world.

A signature in (insert country 1000 miles away here) does not mean anything if a scammer signs it.

I got screwed out of about 40$ on ebay by what seemed to be a US resident a few years ago, and have not used it, or paypal since.

So is it possible, using the US international mail, sending to a paypal verified address, to obtain anything that can be used to defend yourself?

Usually the cost of defending yourself is greater than the cost of the item in question.
