I vacationed to Vegas several times while my dad was living there and got to see some decent jazz.
Look for a pianist named Galleeb Ghallab (sp?). He plays cool, funky jazz with his trio.
I think he holds court in a lounge at Caesar's Palace. That's cool -- because you can bop around the shopping area if they kick you out of the bar!
