Though he is burried in the mix most of the time, there are some songs where his bass sounds really great. He's got lots of skill. SA's new album Unia has to be the bassiest power metal album I have ever heard, it's VERY in your face.
Iced Earth has very good bass, if you wanna call them power metal. They have had so many bassists and other musicians in that band, I dunno who the current bassist is.
And the dude from Edguy.

Adrian is amazing. If you have Inhuman Rampage, check out his bass solo on "Body Breakdown" (around 4:10 mark). Plus the playing on the whole album is pretty solid and quite melodic too. I believe he also played on Sonic Firestorm.

James | He's in Biomechanical now..I don't think he recorded the new album, but he is certainly touring for it. Not really power metal, but they are great and I'm looking forward to seeing him live when they tour for it. |

| | | There's a Swedish kinda proggy power metal band called Seventh Wonder who's bassist, Andreas Blomqvist, is one of the best I've heard. Check out this link to see him doing sweeps in one of the songs (Walking Tall) http://uk.youtube.com/watch?v=TAvrgkNRkqE. Off the same album, 'Waiting in the Wings' check out the fusion influenced solo on 'Taint the Sky' and you will be impressed. |

He's not great, just good.
Anyway, without him they would not sound anything like Opeth (Progressive Death Metal!), but I doubt it would damage their sound much.
