Alright, that's a lot of stuff. What do you guy recommend be the best 2 or 3 on there to start with? I really dig the stuff he did with the Blues Brothers and I have the Blues Brothers movie soundtrack.

If you can find the Stax box set used, it would be a great investment! Duck Dunn and the great James Alexander share most of the bass duties on some of the greatest songs ever recorded IMHO.

I agree.

If you don't have the cash for a box set, start out with Booker T and the MG's (there are several greatest hits collections out there).

You might also want to to pick up his book "What Duck Done".

From what I understand, it contains quite a few of his transcriptions, plus a couple CD recordings of those transcriptions. They might help you choose what songs/albums you're interested in.

I found some stax profiles on Booker T and the MGs and Otis Redding, he was the bassist on most of those sessions and it's a great retrospective.
