Don't know how wide you want to cast the net here, but I've always been mighty impressed by the last section of Jerry Peek's solo in Steve Morse's Cruise Missile

Not really that much to it as far as total length, but IMHO the tapping is what really drives an already impressive solo right over the top

I like to play the tapping intro to I Will Not Bow by Breaking Benjamin on bass, it sounds pretty cool and easy

Obviously Primus will get a few nods, but my favourite Les taps go back to Frizzle Fry...'Mr Knowitall' and 'To Defy...'. Great stuff.

Stu Hamms 'Country Music' is a nice little work out too...
