A flexible tailpiece wire will affect the string height? No, it won't.

Its funny that the guy didn't mention that your string heights would be going up as the board went down and ask you what you wanted him to do about it.

The cable wire is a very good idea as are height adjusters but he may not be the best choice for the work....
