flamenco and jota

Hey everyone, I know this is an international board... and even if it wasn't, most people here have a pretty varied taste in music. I'm still working on that project I posted about a long time ago (Celtic influences in Spanish music except i've ditched celtics because i wanna explore non-western music) and I was wondering if anyone could recomend some good jota or flamenco. You know, examples, the extraordinary, etc etc.

How bout some other types of spanish music that reflects the north african/muslim influence? I'm in the middle of research, just looking for good examples to use in my slide show.

Thanks,
Chris
