A drum is a drum. Percussion is a large umbrella that includes many instruments. Trap set, hand drums, cymbals, marimba, vibes, etc.

Drums have some kind of "skin" and are part of the percussion family. Some non-drum percussion instruments include shakers, guiro, cowbells, wood blocks, xylophone, etc. Colloquially speaking (in the pop world), a drummer is someone who specialises in playing a trap set, whereas a percussionist is generally expected to be proficient on any number of various percussion instruments (such as congas, bongos, djembe, triangle, shakers, etc.).

A head, parche, cuero, a thin piece of material (usually animal hide or plastic) that is stretched across one or both open ends of the body of the drum. And that head/skin is what you hit to make the sound.

Other types of percussion do not have that-- instead you hit something else like a block of wood, a bar or sheet of metal, an earthenware pot, etc.
