Pretty much anything by Explosions In The Sky or Godspeed You! Black Emperor is almost always stunningly beautiful and bordering on painfully simple.

Wow. I would go with his violin concerto, second movement in F major. Or maybe, Beethoven V, second movement. The melodies just outline a major triad, but it's so incredibly poignant.

But even simpler might be, U2's "One," especially because I usually can't stomach U2. But that song, every time I play it or hear it, hits me.

It does't get much simpler or much more moving (to my mind) than Raiford by Earth, or Ask the Dust by Soulsavers.
