The Jesus And Mary Chain did a great version of Vegetable Man by Syd Barrett.
I like Ministry's version of Space Truckin' by Deep Purple.
They're Coming To Take Me Away, the Lard version...
Good Vibrations, by Fleshhouse, from the Shut Up Kitty comp.
In a twist, I like Gram Parsons' various covers he did with different people in his too-short time. The version of Dark End Of The Street he did with the Flying Burrito Brothers really does it for me, as does Linda Ronstadt's version.
And of course, Not Fade Away, done by The Grateful Dead.

The Corrs cover of Everybody Hurts is amazing.

The Meters cover of Down by the River is sick as is the Indigo Girls version of the same song.

Nickle Creeks cover of Out of the Woods is fantastic.

The Mighty Mighty Bosstones cover of Detroit Rock City is pure gold.

Nouvelle Vague does bossa nova covers of 80's new wave hits, with wonderful female vocals (by performers who had not heard the songs before). The name is a play on words. In French it means "new wave" but in Portuguese it means "bossa nova" or "new trend."

Ram Jam's cover of Black Betty is the best version of that song in my opinion

George Harrison's cover of Got My Mind Set On You (#1 in January 1988) was a bigger hit than the original done by James Ray (#22 in 1962)
