I am talking about where there is some kind of house band and players are changed in and out throughout the night.

I believe that is commonly known as *sitting in*
I'd guess material can range hugely, depending on who's playing(meaning the house/hosting band).

Last one I was at was blues. My whole band showed up, we used their amps and drums and played about 3 or 4 songs, sat back down, waited, had a few, and repeated again when no one else wanted to come forward.

Our band went to an open mic where the norm was players sitting in with the house band. Lot of blues. But they were perfectly thrilled to have a full band come up and play some rock. I don't know if all the guys rotating in with the house band had already been practicing or playing together before or what, or if it was just blues standards that they would all have known anyway.
