+1 on Sunshine and Elizabeth Reed ... add to that Phish's live cover of "Sneaking Sally Through the Alley", "Pigs (Three Different Ones)" by Floyd, "How Many More Times" by Zep, and "China Cat Sunflower" by the Dead. Plus many more, especially by all the bands listed, but I'm too lazy to go into that.

Anything Hendrix - especially off "Cry of Love" or "Band of Gypsies"
Herbie Hancock has some fun jams as does Monk
The Who "Live at Leeds" has good jams to play - "Magic Bus" "My Generation"
Santana has some killer stuff
Blues are always fun to jam on - so many different format possibilities
And just coming up with out of the blue chord progressions is fun as well!
