what do you do to keep easy charts interesting?

i was rehearsing with the band at my church. on one of the songs i switched into some kinda bossa groove over the changes. it totally changed the feel of the song. it was cool but made the song sound closer to something you would hear in a bar than what you would expect in a church, so i didn't play it that way for the actual set.

what do you guys do on songs to get away from playing the root of the chord when the original artist was less that creative in their bass lines?
