It really is sad that the parents are disallowing any medical examination though... You'd think that if you gave birth to a god, you'd want it to survive.

Because in certain images Ganesh can have up to five heads.

Lots of deities in the Hindu pantheon have multiple heads. Brahma had five (then four after Shiva cut one off).

I think its possibly because Ganesh was known as Shiva and Parvati's son.
