I don't believe I've ever had fatback, but I do like the song by Mongo Santamaria!! I couldn't find it on youtube though

Couldn't find fatback and corn liquor either........ You tube don't do fat back it seems....

Fatback usually has a "rine"-a very hard strip the fat is attached to (that you chew on all morning.)
