ok....it's about 5 degrees here (or feels like it at any rate)...snowy, sleety, cold... and i decided to make some Lime Bean soup to warm us up.
this is a really simple recipe, but very good
here it is:
take about 12 ozs of country ham scraps (which you can buy from the store here) and about 10 ozs of Andouille sausage- about 2 sausages from a three-pack -and one 1 pound bag of dried lima beans
put in a pot and gently boil until the beans are tender
take another pound of dried lima beans and boil in a separate pot
once the beans in pot #1 are tender, blend it all using a stick or immersion blender, ham, sausage and all, until smooth and creamy.
then take the beans from pot #2 and put them in pot #1....don't blend and cook until you are satisfied that the beans are done
taste...add salt & pepper as you think necessary...
best bean soup i have ever had...
