The 'Students Vegetarian Cookbook' has a pad thai recipe where the sauce is made from some horrible ingredients, like ketchup. Ketchup does not belong in pad thai.

I do love me some pad thai, though! I messed up bigtime yesterday. My fiancee said she'd take me out for dinner, and suggested our favorite thai place. I wasnt in the mood for driving or eating big (I always eat too much there) so I kinda passed on it. Then we ended up going for sushi, and the whole car ride I was wishing I hadnt hesitated on the thai. But then we got to our favorite sushi place, and the newer chef who we met last time was working. pad thai is one of those dishes that everyone makes their own way. unfortunately, when i was in asia the only pad thai i got was at the bangkok airport. it was yummy, but not like getting it on the street.

and now, for my ketchup story: i love asian food. i never assume my versions are anything like the true, pure originals. so i had a co-worker once who was indian but grew up in fiji. at a work pot luck he said he was gonna bring homemade samosas. i was drooling all week. and they were delicious. thrilled at the idea of getting access to an authentic recipe, i bugged him to teach me. he told me the basics and then added that he used tortillas for the shell and ketchup in the filling. my jaw dropped. he said that it works just fine, the ingredients were easier to get and why not?
it was one of several similar experiences that left me to ponder my attitudes about food. maybe because he grew up with the original recipe and ingredients, he didn't feel the necessity of being authentic?
i like to think of ketchup as tomato chutney (there, doesn't that sound better?). it is my secret ingredient. i find that half to one tablespoon full in a dish adds a sweet and sour earthiness to the meal. try it in a spicy coconut milk red curry. it rocks (especially if you don't know its in there!)
